Pick them when the nuts begin to brown, but the involucres are still green. Pull the entire cluster off the bush. You can pick the nuts out right away if you want.
Let them dry out of the sun for at least a week.
Store hazelnuts in a closed container in a cool, dry place up to three months or refrigerate up to six months.
Freeze in an airtight container up to one year.
