Chestnuts

Not all chestnuts are good to eat.

Selection

Select chestnuts in their shells that are heavy for their size. Shells should be dark and shiny and should not give in to pressure.  Ones that have fallen from the tree are perfectly ripe.

Do not try to detach from the branch; if it hasn't fallen, it is not ready yet. To open the burr when it is closed, press open with a stick.

Storage

Store chestnuts in refrigerator for up to 2 months in a plastic bag.

Benefits

Chestnuts are low in fat, cholesterol free. Great source of vitamin C, folic acid, and dietary fiber.
