Chayote Squash

Pale green to white, flattened pear-shaped fruit that tastes nutty.

Selection

Choose firm chayote with smooth, unblemished skin, 4-6 inches in diameter.  Cut from the vine with a knife or hand pruner. Harvest before the flesh gets hard.

Storage

Refrigerate chayote squash in plastic bag for up to a month. Rinse before using.
