Harvest baby potatoes 2-3 weeks after the plant has flowered. All potato varieties should be clean, firm, smooth, dry and uniform in size.
Harvest mature potatoes 2-3 weeks after the plant has died back.
Fingerling potatoes should be kept in the refrigerator for use with in 3-5 weeks.
