Select firm fruits that are free of blemishes, cuts, or bruises. They have a tropical flavor and the texture of a crisp apple. Pick when they reach about 2.5-3.5 inches long; they can be picked green or golden yellow. Green has a more mellow flavor, and golden yellow has a tangy flavor.
